This Chorizo Grill, typically Portuguese, is used to flame Portuguese chouriços and smoked sausages. It is used at the table in a very simple way: a little white alcohol is poured into the bottom of the container on which it is set on fire before the sausage is placed on it. Simply turn the sausage over once during cooking and when the flames stop, the chouriço is ready!
This dish is one of the pieces traditionally made by Sezinando Fernandes Ramalho, one of the last 5 potters to use the ancestral technique of making black pottery in Bisalhães, a technique registered as a UNESCO World Intangible Heritage Site.
The originality of this pottery lies in its colour, which can vary from charcoal black to dark grey depending on the specimens. This colouring is obtained during the firing process as the oven opening is blocked by herbs and wet soil.
Why I love it
- Typically Portuguese, this chorizo grill remains functional and allows you to flame your sausages in the Portuguese style.
- The manufacturing process gives this piece a high resistance and allows it to be used in an oven or placed in the freezer.
- More than an object, this dish is part of the Portuguese heritage, now considered a World Heritage Site by UNESCO.
Want to know more about this manufacturing process? Please read our blog on the black pottery of Bisalhães.
Please note: This piece is handcrafted and entirely handmade. The firing process of the clay used can give it a colour that varies from deep black to silvery grey. The imperfections on its surface are an integral part of the object and are also due to the firing process used.
